To unlock New Characters you must beat the game with different characters every time:
1 time: Kunimitsu
2 times: Bruce
3 times: Lee
4 times: Jack 2
5 times: Wong
6 times: Alex/ Roger
7 times: Kazuya
8 times: Kuma/ Panda
9 times: Ogre
10 times: True Ogre
11 times: P. Jack
12 times: Devil/ Angel
13 times: Tetsujin/ Unknown

Beat the game:
1 time to unlock Tekken Bowling and Theater
7 times to unlock Gallery

In Bowling: Get a score higher than 200 points to unlock the Juke Box.
